PREVIEW: Byron's Mo 'Shroom special

£9.95 for a 6oz burger topped with Portobello mushroom, swiss cheese, crisp streaky bacon, shredded iceberg, red onion and cep aioli.

It would seem that Fred Smith is hitting his stride since Byron cannily brought him on board as its head of food development last year. The "posh" burger chain's current monthly special, Le Smokey, (devised by Smith) is officially its most popular off-menu option ever – and Smith's forthcoming Mo 'Shroom burger (which I've previewed) is nothing short of a masterpiece…

The Mo 'Shroom is, as its name suggests, Byron's Movember special. That's right, for the fourth consecutive year, Byron is supporting the annual moustache-growing charity event and will donate 50p to Movember for every Mo 'Shroom sold this November.

Essentially, the Mo 'Shroom is Smith's take on the classic Mushroom & Swiss burger combo (who remembers Burger King's Mushroom Double Swiss burger?) but his creation takes it to new levels of deliciousness with a host of different ingredients combining perfectly to deliver five star burger awesomeness.

The truth is that I NEVER normally order a burger with mushrooms in it – but Byron's Mo 'Shroom is so damn delicious it's got me completely reevaluating my own tastes. Let me break it down... A standard 6oz Byron beef patty is topped with slices of Portabello mushrooms that have been baked rather than fried to give them a meaty (rather than slimy) texture and intensify their flavour. Super thin, crisp, salty streaky bacon, thin slices of red onion, melted Emmental cheese, and shredded lettuce are complimented by a perfectly pitched cep aioli which, Fred tells me, is made with blanched garlic (so it's not overly garlicky), cep mushrooms and just a hint of tarragon. I actually sampled two Mo 'Shrooms and it struck me as I closed my eyes in a gastronomic reverie for the second time that this isn't just a top drawer burger, it's more than that: it's a really good dish.

AND, in what is now a Byron Movember tradition, there's an opportunity to eat some of these awesome burgers FOR FREE… 

Yup, that's right: Byron will be rewarding registered Movember fundraisers (who can show that they've raised £25 or more) with a FREE hamburger or main course salad between 3pm and 6pm every day for two whole weeks, from November 8th through to November 17th inclusive. Fund raising has never been so delicious!

For peeps not able to cultivate a hairy top lip, the Mo Burger will be available throughout November at all Byron restaurants for £9.95. For every one sold, Byron will donate 50p to Movember. Moreover, Byron staff (those that are able) will be growing moustaches for the cause too. To date, Byron has contributed over £120,000 to the Movember charity and given away 27,282 hamburgers. I've had this and it's a lovely burger. I live in Stoke Newington and a new joint just opened up called Neon Burgers. YOU HAVE TO check it out!
